I've used the various iterations of this guide for my past two playthroughs. It's called the Morrowind Graphics Guide. There is a guide (and a whole bunch of mods) made with that specific purpose. But I don't judge those who would prefer if they were a bit better. The Thastus Guide goes more in detail and takes longer to install. Personally, I don't mind visuals that are a bit on the dated side.
